A preview of Jamon Iberico de Bellota at La Tienda

I just figured this out a few a months ago but the nationally known La Tienda is actually located in Toano, VA – a mere 50 minute drive from Richmond!

Anyway, I got into work today and got this email from a co-worker :


Available now are the Hand-Sliced Ibérico de Bellota Paleta in 4oz packages! These are the cured front legs of the acorn-finished pigs. The hind legs, Jamón Ibérico de Bellota, which takes longer to cure won’t be available till July. How the Paleta compares to the hind legs, I do not know. All I can say is, a preview is better than none. It’s a long way till July and I’ll accept anything! Besides I couldn’t afford a whole leg anyway.
