		<description>I just loved reading your experiences and experiments with duck confit! I had a duck two days ago,though not enough people to eat it on the day so decided to put aside the legs for a confit and searched the web and my cookbooks.I used the fat from the duck which was a freerange with all the signs of a laidback life! I was too late to use your recipe as I had already salted it..in fact it was ready to go into the oven and I found your site when I went to see what temperature! what a delightful read! I am watching the cooking process carefully,and wondering how I will last two weeks or three months before eating it! I simply loved your decision to eat it yourselves..it spoke volumes!....and as for the drawings...! Overall what a wonderful piece of artistry! it exudes enthusiasm as the duck renders his fat! Thank you</description>
