A preview of Jamon Iberico de Bellota at La Tienda

I just figured this out a few a months ago but the nationally known La Tienda is actually located in Toano, VA – a mere 50 minute drive from Richmond!

Anyway, I got into work today and got this email from a co-worker :

Available now are the Hand-Sliced Ibérico de Bellota Paleta in 4oz packages! These are the cured front legs of the acorn-finished pigs. The hind legs, Jamón Ibérico de Bellota, which takes longer to cure won’t be available till July. How the Paleta compares to the hind legs, I do not know. All I can say is, a preview is better than none. It’s a long way till July and I’ll accept anything! Besides I couldn’t afford a whole leg anyway.

  1. Ever been to Pike Place Market in Seattle? There's a store there that has at least 10 varieties of jamon serrano (amongst other lovely things). If I recall correctly, La Tienda is rather overpriced..

    And 4 or 5 years ago, the Stony Point Ukrops got a whole jamon serrano.. I bought a bit of it, but it vanished.. I asked about it and they said they had to thow it out..

    Shoot, I would have paid 1/2 price for the whole piece. I'll bet the Ukrop boys ate it.

  2. Paleta is great, I´m sure you´ll love it too. It´s the cut I often buy, because it´s cheaper (though not cheap, at all) and all the luscious white fat can be used as lard, and is pure heaven.

  3. Funny you say that Veron. My parents are here from Spain and they brought me some jabon iberico, but not the cheap serrano that most people sell in the US, the real deal. They had to sneak it in (oops… I hope there are no customs people reading this) because it can only be brought to the country by certain importers and not the general public. But we have been enjoying it for the last 3 weeks. Thanks for talking about our jamon!!!

  4. I may have to investigate this stuff. Despite my vegetarianism, I've got a mission to bring home novel protein products for my omnivorous wife. She's been put on an Atkins-like diet for pregnancy related reasons (sidestepping the ridiculous diagnosis). That's why I haven't inquired about the macarons. No sugar allowed in my house for the next two months. But, meat is actually required as part of all meals for the time being (tempeh, tvp, tofu and such are also on our menu, of course).
