Boot Camping at the CIA…

No…not the super-secret spy agency but the Culinary Institute of America. I am pretty worn out right now but I promise to give a report of the day to day activities of the French Cuisine Boot Camp that I am enrolled in. We’re up pretty bright and early. Lecture starts at 7 a.m. – yes 7 a.m. ! (Actually orientation was at 6 a.m. this morning).

Our topics include :

Day 1: Northwest  France

Day 2: Northeast  France

Day 3: Southeast France

Day 4: SouthWest France (my favorite)

Day 5: Classical French Cuisine

It’ll probably take me a few weeks to get it all together so stay tuned….!

    How exciting! I had a feeling that with your love for foie gras and confit, you would like the southwest course. I am from the southeast, Provence but my brother has adopted Toulouse and the area for 10 years now ans swears by it.

    It was an incredible week! Learned a lot. Had a wonderful chef as an instructor and an amazing group of foodies as fellow boot campers. The whole group was incredible…so much fun and so passionate about food.
    Oh..and Helene I think I'm switching to the southeast as a favorite…
    I haven't written a single thing down so I am going to depend on my memory and the course manual to document the experience…

    It was an absolutely amazing week! What a great experience and the people in the class made it fun also. The instructor was not only knowledgeable but extremely funny and fun to work with. As it stands, I'm definitely a go for another boot-camp. I agree with my wife on favorite region. We love Provence style of French food!
