By the way, one of the easiest ways to get batter into cupcake tins is to use a small ice cream scoop.  It lets you put the exact same amount of batter into each cup, and is very easy to control so that you don&#039;t spill stuff all over!

&lt;p&gt;As for the sweet that takes me waaay back to the past, it&#039;s carrot cake - but the carrot cake we make here in Brazil is a bit different. There&#039;s no nuts, raisins and the carrots are blended in a blender, with the other ingredients. Then, after the cake is baked, a silky chocolate icing is spread on top of it.&lt;br /&gt;
My mom used to bake this cake all the time for us, it was delicious!&lt;/p&gt;

&lt;p&gt;As for the filling the cupcake cups method, I&#039;d definitely try the measuring cup system.&lt;/p&gt;
