When I was growing up, our neighbor had a recipe for Anisette Biscotti that used 6 eggs. It created a very cake-like biscotti that spread more in the pan and resulted in longer cookies. The difference was no nuts or chocolate chunks so it would also rise easier. I'll post the actually recipe for the holiday season eventually, but wanted you to know you could probably get away with a few more eggs! </p> Looks like it came out perfectly.
