Only after eating Risotto is when I'm not hungry anymore. You think you can eat it like you do pasta but you're wrong. Also, this truffle looks like a master art-work of your dog in the back yard but don't let the looks fool you. It adds such a complex and wonderful taste and aroma that is definitely worth it...it's price however is a different story!! This is a wonderful dish to have any time. I also love making this dish with Saffron.

That truffle is beautiful. I've often wondered what I'd do if I had one myself. At the risk of being rude... where did you get it and how much did it cost? My wife loves to make risotto. Your recipe is making me hungry. I've got a truffle story from the Inn at Little Washington on my blog. Maybe my own truffle cooking experience is soon to come.

Mmm, I love the sound of this. I've only used truffle oil, but will have to try the real thing one of these days. I topped a risotto I made recently with some truffle oil, very good, though I'm afraid it did have butternut squash! Recipe is here:

http://cookingchat.blogspot.com/2006/11/butternut-chicken-risotto-with-fresh_15.html

good lord - what a precious dish! scallops and truffles are always a winning combination - white ones, that is! If only they were more affordable ;-)
