Hi there,

Do you have any recommendations for unsweetened chocolate as well as cocoa powder (dutch-processed), and where I can find them?

This is the "Hungry" hubby who does not care much for sweets! Well, this time I made sure my wife saved a few pieces of the 2 different brownie types she made for me. Granted, eating almost one would take me to my limits of sweetness intake (even though these are not that sweet) but they taste really good. I especially like some kind of nuts in my chocolate. My favorite is hazelnuts....maybe for the next batch! Looking forward to after-lunch "dessert" time so I can chow one of these brownies!!!
I must say, my favorite one is the one with melted chocolate. It has a deeper chocolate taste than the one made with cocoa powder.

I just found your blog and am enjoying reading your postings... I thought I was the only one who makes 2 different versions of something at the same time in order to compare them! I recently made 2 different pana cottas! (One lowfat and the other full fat...
of course, you know which one was better!!! although, if you didn't have them side by side, the lowfat one would be ok but not as luxurious).
I look forward to reading more postings!

Hi robin! Thanks for stopping by. I like trying different recipes at the same time specially if I'm searching for the best one. I've been wanting to try pana cottas for a while now. I have this recipe for creme fraiche pana cotta which I've never gotten around to try .
I'll post it here once i've done it.

I made a lemon panna cotta... and a plain one. If I can find the recipes I'll send them to you. I know that one was from Cooks Illustrated (somewhat recent issue)...
I'll be interested to know about the one with Craime Fraiche- I have some in the fridge right now! Now I just need time to cook!

I could email you the recipe of the creme fraiche panacotta if you want. It looks really good. Yeh, I did read the current issue of Cook's Illustrated about the salt brining. It's about time they did an article on it. It works great on most types of meat and you get the juiciest results.
